So, since my last batch of vegetable soup went so quickly I wanted to make a big batch so we can have some leftovers. I didn't have all the same ingredients I did before so I used what I had. I think I like this version better! I don't think you even need to use the better than bouillon base either. You could just add a little bit more salt if needed.
Vegetarian Vegetable Soup
3 bags of frozen vegetables for soup (16 ounces each)
1 can tomato paste
2 tsp dried thyme
2 tsp dried basil
2 tsp salt
2 tsp sugar
1/2 tsp pepper
1 heaping tablespoon better than bouillon no beef base (vegetarian)
water
about 3/4 cup of alphabet noodles or other small pasta
Add all ingredients to a large sauce pan and add water to cover about 2 inches. Bring to a boil. Lower heat and let simmer a 1/2 hour. Right before serving add 1/4 cup of alphabet noodles to soup. Let cook about 4 minutes. Serve immediately.
I would wait to add the alphabet noodles until after you reheat it and put them in after the soup is hot!
