Vegan MoFo 2016 Day 17 - Vegan Vegetable Scampi


Hey MoFo Friends!  Happy Day 17!  I absolutely love garlic and I love scampi.  I can’t believe I haven’t made this one yet.  It is so easy and so yummy.  I think fresh garlic is what makes it taste so good but you could definitely put garlic powder in place of the fresh garlic.  You could do any veggie combination you like too.



Vegan Vegetable Scampi

2 Tablespoons Earth Balance margarine
2 Tablespoons olive oil
3 big cloves of garlic, minced
½ teaspoon salt
¼ teaspoon pepper
Cauliflower florets - about a cup
1 carrot, cut up into strips
½ zucchini sliced and quartered
Splash of water or white wine
½ cup of cold water
1 teaspoon corn starch
Pasta or rice already cooked.


Melt the margarine and add the olive oil over medium heat.  Add the garlic, salt, pepper, cauliflower florets, carrot strips, zucchini and the splash of water or wine.  Cook until the veggies are your desired doneness (about 5 minutes).  Add the corn starch to the cold water and stir well.  Add corn starch water to the pan.  Stir until sauce thickens up.  If too thick, add a few tablespoons of water to thin out.  Serve over pasta or rice.
