Friends! Happy Day 18! As promised, I made the leftovers of my Vegan Cauliflower with Mema Nutmeg Sauce into a soup.
It is absolutely fabulous. I love
to eat a cream soup or a broth in a mug and just sip it. This soup is also very good with some of the
leftover chopped up cauliflower pieces too to give the soup a chunky texture.
Vegan Cream of Cauliflower Soup
1 cup of
leftover Vegan Cauliflower with Mema Nutmeg Sauce
½ cup of
vegetable broth
Splash of
coconut milk creamer
Nutmeg
Salt &
pepper to taste
Put the
cauliflower, vegetable broth and the splash of coconut milk creamer in a sauce pan
and heat over medium heat. Use an immersion
blender to blend the soup smooth. (You
can also put all the ingredients into a blender and then put in a sauce pan or
microwave safe dish to heat.)
Sprinkle with
nutmeg to serve.

This sounds lovely! There's nothing like a good thick cauliflower soup - I'm a huge fan of creamy soups like this.
