Vegan MoFo 2016 Day 19 - Vegan Lemon Blueberry Muffins

Hey MoFo Friends!  Happy Day 19!  One of my colleagues at work loves lemon blueberry anything.  So, I decided to make a batch of lemon blueberry muffins.  Everyone loved them!  What a great start to the weekend! 



Vegan Lemon Blueberry Muffins

2 ½ cups flour
2 teaspoons baking powder
¼  tsp salt
1 cup raw sugar
1 cup coconut milk creamer
1 tsp vanilla
¼ cup of lemon juice
¼ cup applesauce
1/3 cup of sunflower oil
2 cups of blueberries
Sprinkle tops with raw sugar

Mix the dry ingredients together.  Add the coconut milk creamer, vanilla, applesauce and grapeseed oil until combined.  Slowly mix in the blueberries.  

Fill the muffin pans.


350 degrees for 30 minutes   12 muffins

These muffins were not very lemony.  I would probably  use the zest of a lemon next time and maybe increase the lemon juice while decreasing the coconut milk creamer.
