Happy Day 20! I have made stuffed
mushrooms a couple years ago but I made them again last night for a quick
appetizer. OMG. Hubby and I loved them. Hubby even ate the leftover stuffing on its
own while the mushrooms were baking.
Vegan Stuffed
Mushroom Little Appetizer
4 medium mushrooms
1 small stalk celery, chopped fine
¼ medium sweet onion, chopped fine
1 Tablespoon Earth Balance Margarine
1/8 teaspoon salt
2 pinches of thyme
1 cup of water
¼ cup panko bread crumbs
Pull out the stems of the mushrooms and
chop fine. Also, take a teaspoon and
scrap out the inside mushrooms and put that into the frying pan.
Melt the margarine and add the celery and
onion and salt. Cook over medium heat
until they are soft.
Add the water and
thyme towards the end to help the veggie soften. Allow to reduce about half. Stir in the panko break crumbs.
Fill the mushroom caps with the
stuffing.
Bake at 350 degrees for a half
hour.
