I am home from our road trip to
drop Bri off at college and then make our way home. We stopped to attend two surprise parties and
visit with my in-laws. All in all it was
an excellent weekend but it’s good to be home and I’m so excited to work on my
menus for the next few days. I’m having
a surgery tomorrow so I’m going to try to get ahead of my posts. I will schedule my posts like I did for
Sunday’s and Monday’s posts.
David asked me to make my black
bean burgers as part of one of these posts.
So here it is. They are simple
but oh so yummy.
Black Bean Burgers
2 cans black beans drained and
rinsed
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. sea salt
¼ tsp. ground pepper
2 tablespoons flour
Put one can of drained & rinsed
black beans in a big bowl and mash with a potato masher or a fork. Stir in other can of whole beans (drained
& rinsed), spices and flour. Mix
until combined. Make into patties or as
my son likes them into slider size! Fry
in a frying pan until browned on both sides and heated through over medium heat
– about 3 – 5 minutes a side.
Serve with whatever toppings you
like. We like tomato, onion,
pickles and avocado slices. Yum!
We freeze any extras if we have them.
