Here is one of my favorite simple
dinners. It’s a one pot meal and there
are always leftovers for me for lunch!
White Rice with Green Peas
1 cup rice
2 cups water
1 tsp. salt
1 cup frozen green peas
Put rice in a pot and cover with
the water and add the salt. Bring to a
boil and simmer over low heat for 15 minutes.
Stir in the green peas and continue cooking until all water is absorbed –
about 5 to 10 minutes. Fluff to serve
from pot or put in a serving dish.
